My version of Potato & Sausage bake

5 potatoes peeled, cut into chunks, par boiled until just tender, drained

extra virgin olive oil

Tuscan Seasoning (available from spices section in supermarket)

6 thin pork sausages cut in half

4 thick slices or 2 bread rolls cut into chunks (Italian bread is better for this)

200g Haloumi cheese diced (available from deli section in supermarket)

 Method

  1. Pre-heat oven to 220c.

  2. In a bowl add the bread chunks, drizzle well with olive oil and sprinkle with Tuscan Seasoning, set aside.

  3. In a baking tray add the potatoes, drizzle with olive oil and sprinkle with Tuscan Seasoning, bake for 20 minutes.

  4. Remove potatoes from oven and add the sausages, bake for a further 20 minutes turning sausages once after 10 minutes.

  5. Remove tray from oven add the bread and Haloumi cheese and bake for 15 minutes or until bread is golden and toasted.

  6. Serve with a green salad.

NOTE:- This is quick and easy, tastes great and  is a good idea when you have a group of people over, just increase the quantities and serve in the centre of the table straight out of the tray for a rustic feel.
