My version of Potato & Sausage bake
5 potatoes peeled, cut into chunks, par boiled until just tender, drained
extra virgin olive oil
Tuscan Seasoning (available from spices section in supermarket)
6 thin pork sausages cut in half
4 thick slices or 2 bread rolls cut into chunks (Italian bread is better for this)
200g Haloumi cheese diced (available from deli section in supermarket)
Method
- Pre-heat oven to 220c. 
- In a bowl add the bread chunks, drizzle well with olive oil and sprinkle with Tuscan Seasoning, set aside. 
- In a baking tray add the potatoes, drizzle with olive oil and sprinkle with Tuscan Seasoning, bake for 20 minutes. 
- Remove potatoes from oven and add the sausages, bake for a further 20 minutes turning sausages once after 10 minutes. 
- Remove tray from oven add the bread and Haloumi cheese and bake for 15 minutes or until bread is golden and toasted. 
- Serve with a green salad. 
NOTE:- This is quick and easy, tastes great and is a good idea when you have a group of people over, just increase the quantities and serve in the centre of the table straight out of the tray for a rustic feel.
