Fettuccini with fresh Crab

500g fettuccini

400g fresh cooked crab meat

2 cloves of garlic thinly sliced

1 small red chilli, de-seeded and thinly sliced

1/2 cup chopped fresh parsley

2 tablespoons extra virgin olive oil

3/4 cup good dry white wine

 Method

  1. Put a large pot of water to boil.

  2. Add salt to boiling water and add fettuccini, stir for a minute and leave to cook.

  3. In a frypan heat the oil, add the garlic and chilli, very gently saute, do not over brown.

  4. Add the crab meat and wine, simmer to warm through and reduce wine.

  5. Turn off heat, add parsley, mix through.

  6. Drain fettuccini, mix through cram mix.

  7. Serve on a large platter while still steaming hot.

NOTE: This is a quick and impressive meal served with crunchy italian bread, it will impress your family or guests.
