Broccoli Fritters

These fritters are easy to make and taste great hot or cold. Also they are oven baked not fried.
Ingredients
750g frozen broccoli steamed
5 rashers shortcut bacon diced
2 large potatoes steamed and mashed
3/4 cup grated Romano
Salt / pepper to taste
3/4 cup breadcrumbs
2 eggs

Method
1. Using a fork lightly mash the broccoli.
2. Add the potato, salt, pepper and Romano cheese, mix lightly.
3. In a dry pan cook the bacon until slightly crisp, add to the broccoli mix.
4. Add the eggs and breadcrumbs, using your hands mix to combine. (If you need to add more breadcrumbs do so a little at a time).
5. Using damp hands shape into patties and place on a tray lined with baking paper.
6. Spray lightly with olive oil or canola oil spray.
7. Bake in s preheated oven at 180c for 20 minutes, turn over and bake for s further 8 minutes.
8. Plate up and sprinkle with extra Romano cheese.

Notes: you can add sautéed onion to the broccoli mix if you like.
